Chamomile is known for its calming and relaxing qualities and is often used as a bedtime drink to help people fall asleep faster. “Chamel milk tea,” though, was my creative father’s concoction that inspired his sleep-struggling kiddo to finally tuck in and rest at night. Rather than steeping the flower leaves in water, they are infused in whole milk while it comes to a simmer on the stovetop. Combined with a little honey and a single star anise pod, this fragrant “chamel milk” is a delightful capper for a long day and an invitation to a restful night’s sleep.
MAKES 12 OUNCES
2 teaspoons dried chamomile flowers (or 2 teabags)
12 ounces whole milk
1 teaspoon raw honey
1 star anise pod
Stir chamomile into milk and heat in a small saucepan on low heat until it comes to a simmer. Add honey and star anise, stirring to dissolve the honey. Frothing the milk is optional, but makes for a beautiful presentation.
